This is a variation on a theme of fettuccine from an earlier post (What’s Cooking with Costco? Vol. 1: Grilled Chicken Fettuccine Alfredo). It’s meatless, for those abstaining from meat during Lent.
What you need:
- fettuccine,
- alfredo sauce
- mushrooms (optional)
- spinach (optional)
You can get all these items at other places, not just at Costco, but the bulk pricing and selections at Costco makes this a great meal at a decent price to feed a family.
Follow the directions on the fettuccine packaging. Costco has these in the refrigerated section, but the pantry fettuccine will do as well.
Pour a jar of Rao’s Alfredo sauce in a pan, and heat it up. I used one jar per package of Alfredo. The Costco size comes in two in one offering, meaning 2 packages of fettuccine in each purchase and 2 jars of Alfredo sauce in each purchase. Use one jar/package for now and another jar/package for later, or use both depending on the size of your family.
Combine the cooked fettuccine with the Alfredo sauce in the pan.
To jazz it up, sauté the mushroom and spinach with the Alfredo sauce. Then combine it with the cooked fettuccine.
